After making several batches of my "classic" Amazeballs, I decided to switch up the original recipe... just for fun. I exchanged walnuts for the almonds, added raisins, spices and vanilla, and, to make up for the moistness of the raisins, increased the amount of oats.
The result is a slightly softer Amazeball, reminiscent of an oatmeal raisin cookie, with a subtle hit of cinnamon and vanilla. I think I am in love.
Oatmeal Raisin Amazeballs
1/2 cup pitted honey dates
1/2 cup thompson raisins
1/2 cup ground walnuts
1/4 cup hemp hearts
3/4 cup quick oats
1 tbsp cinnamon
1/8 tsp fresh nutmeg
1/8 tsp salt
1 tsp vanilla extract
1/4 cup All-Bran buds cereal
In a food processor, pulse dates until very finely chopped; add raisins and process until mixture forms a ball. Add walnuts, oats, hemp, spices, salt and vanilla; process until evenly mixed and uniform in texture. (Mixture should hold together when pinched.) Add cereal and pulse to combine. Form balls, using one tablespoon of mixture for each, rolling firmly between palms until smooth and round. Store in an airtight container in the refrigerator. Makes 18.
