Oatmeal Banana Chocolate Chip Muffins
1/2 cup quick oats
1/2 cup milk, dairy or almond
1 small banana, well-mashed
1 egg, lightly beaten
1 tbsp canola oil
2 tbsp brown sugar
1/2 tsp vanilla
1/2 cup + 2 tbsp flour
1 1/2 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
pinch freshly grated nutmeg
1/4 tsp cinnamon
pinch freshly grated nutmeg
2 tbsp chocolate chips
Preheat oven to 425 degrees. Line 4 cups of a muffin tin with paper liners.
In a small bowl, combine oats and milk. Let stand for 10 minutes to soften oats. After 10 mins, stir in banana, egg, oil, vanilla, and 2 tbsp brown sugar. In a medium bowl, whisk together flour, baking powder, spices and salt. Add chocolate chips, tossing to coat with flour. Add wet ingredients all at once, and quickly stir, just to combine. Spoon batter into prepared muffin pan, dividing evenly. Bake for 20 mins, or until toothpick inserted in centre comes out clean. Cool on rack before serving.
Makes 4 (or 6 slightly smaller muffins.)
